You have been loving mac and cheese since you were a child. This recipe will bring back memories of Mama fixing your favorite meal with one of your favorite sides. Made from scratch and not that box stuff.
- Large Elbow or Ziti Noodles
- 2 Eggs
- 3 cups Milk
- 1 large pack Sharp Cheddar Cheese
- 1 large pack Monterey Jack Colby Cheese
- 2 tablespoons Shortening
- 1 teaspoon Black Pepper
- 2 teaspoons Salt
- 1/4 stick Butter
- Paprika

In a Large Pot, add 4 cups of Water bring to a boil. Add Shortening, salt and noodles. Stirring occasionally cook noodles until tender. Drain Noodles in a colander (rice Strainer)

While noodles are cooking, prepare cheese sauce. Pour milk in a sauce pot, allow to heat on a medium temperature setting.

Cut cheese into squares and add to milk. Allow cheese to melt, stirring often so that it does not stick.

After cheese is melted, add scrambled raw eggs.

After noodles are cooked, add cheese sauce to noodles. Stir until all ingredients are evenly combined. Lightly sprinkle paprika for garnish.

Pour mixture into a glass oven pan. Bake in oven at 325 until cheese is golden brown about 20 to 30 minutes. Check often to prevent from over cooking.
